Lion Cakes
Ingredients
Mushroom
1 lb of Lion’s Mane mushroom
Cake Mixture
1/4 cups scallions (sliced in half, then chopped)
2 cloves garlic (minced)
1.5 in ginger (minced)
3/4 tsp 5 spice powder
1/2 tsp chili powder
dash of plum vinegar
1/2 tsp kombu (grind to powder)
2 Tbs cilantro (chopped)
1/2 cup panko
flax egg (as needed to bind)
potato starch
oil
water
salt
Directions
1) Break down mushrooms into small pieces. They tear easily along the fibers. Add mushrooms to a pan with a couple tablespoons of water and a pinch of salt. Simmer covered for a few minutes until wilted.
2) Let mushrooms cool.
3) Lightly sauté scallions, garlic, ginger. Pour contents of pan in to a mixing bowl. Add 5 spice, chili powder, vinegar, cilantro, kombu, salt. Mix. Taste.
4) Once lion's mane has cooled, work in batches to squeeze out as much liquid as possible from the mushroom.
5) Add lion's mane to the mixing bowl. Stir it up and salt to taste. Add flax egg and panko. Mix all together and form cakes. Dust with potato starch then sauté in oil. Flip the cakes once the underside is golden brown and crispy. Cook for a few more minutes until crispy.
